Morocco’s oldest imperial city and home to al-Qarawiyyin, the world’s oldest continuously operating university. Put your map away and lose yourself in the maze of Fes el-Bali; you will find hammered copper and leather tanned in the famous Chouara tanneries, with the scent of saffron drifting from neighbourhood ovens each dawn.
Do not miss the blue-tiled gate of Bab Boujloud, or the tannery view from the surrounding terraces. In the evening, enjoy Andalusian music in one of the historic riads.
